Champagne Billecart-Salmon 

It all started  in 1818 when Nicolas François Billecart and Elisabeth Salmon were married, marking the creation of their Champagne House. Theirs has been a family story since the beginning with Louis Salmon, brother of Elisabeth and a passionate oenologist, getting involved in the creation of the wines.

Thus, over 7 generations, each member of the family has endeavoured to continue the family tradition, staying faithful to the same motto: "Give priority to quality, strive for excellence.

As part of the ever present quest to maintain the quality of their champagnes, in the fifties, the House established the technique of cold settling combined with the use of stainless steel tanks for a longer fermentation at a lower temperature. 

The vinification is carried out cru by cru and grape variety by grape variety which allows for the conservation of the nuances of expression of the terroir.

In vinifying at a low temperature, the fermentation process slows down, encouraging ethereal aromas, which are delicate and allow all the purity of the fruit to be expressed. It is the absolute signature of the Billecart-Salmon style.

The Wines

CHAMPAGNE BRUT RÉSERVE

Balance and harmony combine together in this light and subtle champagne.

Its blend is made up of Pinot Noir, Chardonnay and Meunier sourced from the very best sites of the Champagne region.

It is the ideal partner to delight guests on every occasion, both as an aperitif and throughout the entirety of a meal.

CHAMPAGNE BLANC DE BLANCS GRAND CRU

This cuvée is a blend of two different years revealing the special quality of the Chardonnay.

Its complexity, its great vinosity and the surprisingly fresh finish is particularly appreciated by the most informed wine lovers.

CHAMPAGNE BRUT SOUS BOIS

This unique cuvée, which is entirely vinified in oak, is composed of the three Champenois grape varieties.

It totally masters the art of blending by renewing the ancestral spirit and savoir-faire of the original champagnes. 

A burst of flavours (notes of grilled brioche and toffee) thanks to the distinguished power and maturity which is a mark of any great wine of Champagne.

BILLECART-SALMON VINTAGE 2013

The delicious intensity of precise fruit with citrusy and nutty notes (grapefruit pulp, slivered almonds). A nuanced sensory development built around pastry scents (raw butter, white fruit jelly).

A masterful aromatic expression with a refined, refreshing purity.

BILLECART-SALMON CUVEE NICOLAS-FRANCOIS 2008

This exceptional cuvée was created in 1964 as a tribute to the House’s founder.

It results from the blending of Grands Crus from the classified Côte des Blancs vineyards (Chardonnay) and the Montagne de Reims (Pinot Noir).

Its vinification, partially in traditional oak casks, underpins the generous character of this fine, elegant and rich wine.

Served at cellar temperature (11°C to 12°C), this cuvée will bring out the flavours of an excellent sole in lemon butter or a delicious milk-fed veal chop with chanterelle mushrooms.

BILLECART-SALMON CUVEE LOUIS BLANC DE BLANCS 2009

This cuvée was named in tribute to Louis, Elisabeth Salmon’s brother, who was passionate about oenology and highly involved in winemaking from the earliest creation of the House.

Originating from the best parcels of the Côte des Blancs, the Blanc de Blancs vintage is endowed with purity and minerality. 

Its potential and balance express a remarkable finesse worthy of the most splendid food pairings: a lobster risotto or Teriyaki-style king scallops a la plancha.

BILLECART-SALMON BRUT ROSÉ

The production secrets and the vinification method of this cuvée go back to the origins of the House of BILLECART-SALMON and have been handed down for seven generations.

The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine.

Its pale and bright pink colour is adorned with warm glints of gold and its delicate slowly rising bubbles give it a persistent mousse.

This cuvée unveils a subtle aroma leading to an elegant, delicate bouquet of fine notes of red fruits and zest of citrus fruits.
